Vanilla extract should be added to cooked mixtures after they have been briefly cooled so the flavor does not dissipate. Vanilla flavoring is a blend of pure and imitation vanilla. Product packaging can be confusing: Natural vanillin is a substance intrinsic to the vanilla bean, but artificial vanillin is made from wood-pulp by-products. An essence, on the other hand, can have two distinct meanings. Vanilla extracts are made by soaking the vanilla beans in an alcohol and water solution, mainly with vodka, as its flavor complements the vanilla. Vanilla originated in Mexico, and it was once the producer of the finest vanilla, but almost all the extract from Mexico, Central America and the Caribbean is now synthetic, and NOT pure vanilla extract. Vanilla essence and vanilla extract are both flavoring ingredients. Imitation vanilla is composed of artificial flavorings (most of which are paper-industry by-products treated with chemicals) and it often has a harsh quality that leaves a bitter aftertaste. There are double and triple strength vanilla extracts, as well as a vanilla essence - so strong that only a drop or two is needed. The resulting amber liquid is clear and richly fragrant. The latter is also called imitation vanilla flavor. Not to be confused with the imitation stuff, vanilla flavoring is also made with real vanilla beans. When shopping for vanilla extract, you’ll likely see products labeled as either pure vanilla extract or vanilla essence. Give it a try in recipes like vanilla pudding or crème brûlée, where its flavor really shines. By FDA definition, a pure extract means that the vanilla flavor can only come from vanilla beans and nothing else.1 This factor draws a definitive line between pure extract and imitation vanilla, but it relates only to the vanilla flavor and doesn’t necessarily mean that nothing other than vanilla beans contributed to the overall product. The FDA specifies that pure vanilla extract contain 13.35 ounces of vanilla beans per gallon during extraction and a 35% alcohol/65% water mixture. Vanilla extract is made by macerating/percolating chopped vanilla beans in ethyl alcohol and water for approximately 48 hours. Bourbon vanilla does not contain bourbon - it is named for the period when the island of Reunion was ruled by the Bourbon kings of France.
